Stone-ground flours

Grinding on stone millstones is an ancestral skill that allows the miller to express his art to the full.
This soft, silky flour gives bread taste, authenticity and preservation. Traditional stone milling preserves the grain germ and produces a high-fiber flour.


THE ART OF ADJUSTING THE GRIND

The hand is the ideal tool for adjusting the grinding wheel. Touch defines the quality and precision of grinding, as well as the finish of the product.


THE ART OF RESHAPING THE STONE

Repointing the stone with a bush, restoring the wheel's strength, redesigning the groove that finely grinds the grain - this is the skill of the wheel dresser.

 

Spelled flours

Spelt, the ancestor of wheat, also known as triticum spelta, is a cereal with many nutritional qualities. This cereal has the particularity of retaining its husk after threshing at harvest time.

Spelt contains all the essential minerals: sodium, calcium, potassium, magnesium, silicon, phosphorus, sulfur and iron.

It contains more vitamins B1 and B2 than wheat, and higher proportions of protein and fiber to meet daily human needs. It also provides the 8 amino acids essential to an adult's daily diet. What's more, spelt is particularly well tolerated, especially by people who are sensitive or allergic to wheat. It can be substituted for wheat in their diet.

We rigorously select our raw materials exclusively in France. Wheat, rye and spelt are our specialties. We grind them on millstones or cylinders.
